Banana Bread

 Perhaps the best banana bread ever.

 Dense and gooey. 
No sugar.
No gluten.
Nothing to cry about.
 Except that it is all gone now.
Looking at these pictures makes me crave more.
 Come on bananas, ripen! 

For the topping:
Nuts-I used Pecans and Hazelnuts

Dice Apple and place on baking sheet with nuts, honey and cinnamon.
Bake at 350 for 7-10 min

For the Banana bread:
Two large ripe bananas
6 eggs
1/2 cup honey
1 teaspoon cinnamon
2/3 c coconut flour
1 tablespoon vanilla
5 tablespoons butter melted.

Beat with a whisk the banana, melted butter, cinnamon and vanilla.
Slowly add the 6 eggs.
Add the honey and then the coconut flour.
Pour in to a well greased loaf pan add the topping and bake for 20-25 minutes at 350.
